Are we free to "roam" around the airspace, with routes of our own, or using official existing routes not yet implemented/available in the AFVA flight schedules? If so, would these flights count toward finishing accomplishments, like "European City Bash" ?

well free routes ? as long the routes is in the schedules you are allowed to fly that...eg if a flight is like this AF1234 EKCH-EDDM A320 and you are currently at EHAM. You can directly go to EKCH and do the AF1234 route and with another aircraft eg 737-800 if you have the rating for the aircraft.
